Cranberry Banana Bread
- 1/2 cup maple syrup
- 1/2 cup unsweetened applesauce
- 4 very ripe bananas, mashed well
- 1 1/4 cup dried cranberries
- 2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- Preheat oven to 350°F.
- Butter 9×5 loaf pan.
- Sift together flour, baking soda, salt and spices. Add cranberries.
- Mash the bananas and add all the wet ingredients.
- Add the wet ingredients to the dry. Mix well.
- Pour batter into loaf pan.
- Bake for an hour.
